• 5 tbsp sun­flower oil • 4 red chill­ies, whole • 8 cloves gar­lic, roughly chopped • 1kg tinned whole peeled toma­toes • 1kg ripened fresh toma­toes • 1 sprig of rose­mary • 1 tbsp sugar • 1 tbsp salt • freshly ground black pep­per 1. In a large pot, warm the oil, then add the chilli and gar­lic, and cook for about 3 min­utes on a medium heat. 2. Add the toma­toes, rose­mary, sugar, salt and freshly ground black pep­per, and cook for 40 min­utes. 3. Taste the sauce as you go and check if you need to add more salt or sugar as toma­toes al­ways dif­fer slightly in their acid­ity and sweet­ness, and it’s nec­es­sary to keep track of that dif­fer­ence and adapt the bal­ance as you go. 4. With a hand blender, blend the sauce un­til thick and creamy, cool down com­pletely and store in an air­tight con­tainer in the fridge.
