CHILLI, TOMATO AND GARLIC PRAWN SPAGHETTI

Serves 4

Prep + cook time: 25 minutes

• 1 tbsp olive oil

• 1 medium brown onion (150g), chopped finely

• 2 cloves garlic, crushed

• 1 fresh long red chilli, chopped finely

• 400g can diced tomatoes

• 1/3 cup coarsely chopped fresh basil

• 1L (4 cups) water

• 500g spaghetti

• 500g uncooked shelled mediumsize­d prawns

• 2 tbsp olive oil, extra

• 1/3 cup small fresh basil leaves

1. Heat the oil in a large saucepan; cook the onion, garlic and chilli, stirring until the onion softens. Add the tomatoes and chopped basil; cook, stirring, for 1 minute.

2. Add water to the pan and bring to the boil. Add the pasta; once it begins to soften, gently mix into the tomato mixture. Boil uncovered, stirring all the while, for 5 minutes. Add the prawns; boil uncovered, stirring all the while, for 5 minutes or until the pasta is tender and the prawns just change colour. Season to taste.

3. Serve the bowls of pasta drizzled with extra oil. Sprinkle with basil.
