Cut the toma­toes into 1cm slices, salt them and leave to let ex­cess wa­ter drain off for five min­utes.

Cut the moz­zarella into 1cm slices while you wait for the toma­toes to drain.

Al­ter­nate the tomato and moz­zarella slices on the plate and dress with a driz­zle of olive oil and a few basil leaves. Serve cold.
