Cut the tomatoes into 1cm slices, salt them and leave to let excess water drain off for five minutes.

Cut the mozzarella into 1cm slices while you wait for the tomatoes to drain.

Alternate the tomato and mozzarella slices on the plate and dress with a drizzle of olive oil and a few basil leaves. Serve cold.
