3 Large tomatoes, sliced into wedges 1 tbsp red wine or balsamic vinegar 1 tbsp olive oil 8 Fresh basil leaves, julienned ½ cup crumbled feta or goat’s cheese Salt and black pepper, to season

Avocado and mango salad

The combinatio­n of rich, buttery avocado and sweet, tart mango is dazzling.

What you’ll need

2 Ripe avocados, peeled and cubed 2 Ripe mangoes, peeled and cubed ¼ Fresh lime, squeezed ¼ tsp salt

The how-to

Place the avocados and mangoes in a bowl. Drizzle with lime juice, sprinkle with salt and serve.
