Oat­meal lace cook­ies

These cook­ies are del­i­cate and sweet – and not too heavy for a de­li­cious morn­ing meal.

What you’ll need

½ cup un­salted but­ter

1 cup sugar 1½ cups quick-cook­ing rolled oats ¼ cup all-pur­pose flour 1 tbsp vanilla ex­tract ¼ tsp salt

The how-to

1 Mix but­ter and sugar us­ing a mixer fit­ted with a pad­dle (or use a rub­ber spat­ula) un­til creamy. Scrape down the sides of the bowl, add re­main­ing in­gre­di­ents and mix again. Cover and re­frig­er­ate. 2 Heat oven to 180°C. Place tea­spoon­fuls of dough 5cm apart on a bak­ing sheet and smash down a bit (they will spread). Bake un­til golden brown (12-16 min­utes). Al­low to rest for about two min­utes, then trans­fer to a rack to cool. Makes about 36 cook­ies.
