MASHED BUTTERNUT WITH CHORIZO

Super-soft out of the fire

Butternut can be mashed together with butter like in mashed potato – it’s a delicious and healthy side dish. First cook the butternut in the fire, mash it, and serve it in the skin.

Ingredient­s

(enough for 4) 1 butternut 5 cm chorizo sausage, chopped 125 g cream cheese (we used the blue cheese flavour) a handful finely grated parmesan cheese or any other flavourful cheese of your choice

Here’s how

1 Cut the butternut in half lengthwise and remove the seeds. Fill with the chorizo and a tablespoon butter or olive oil. Put the two halves tightly together and wrap securely in two layers foil. 2 Bake in warm coals for at least one hour. I then place the butternut in a black pot with a lid over the coals, like a pot bread, for at least one hour or until soft. 3 Remove the foil. Use a tablespoon to scrape the inside of the butternut out of the skin. Season to taste with salt and pepper and add a few spoonfuls cream cheese and the grated cheese to the butternut. Use a fork and mix everything together. Serve in the skin with any braai meat or potjie.

says If you don’t have a pot, put it on a grid and turn every now and again. If the coals are too warm the skin will burn before the inside is soft, and if you don’t cook it long enough it’s not going to be super-soft.
