BILTONG-AND-FETA PASTA SALAD A different kind of salad

Keep this recipe handy for a hassle-free light lunch in the campsite. Ingredient­s (enough for 6) 250g rigatoni pasta 200g fine biltong 10 peppadews 2 wheels feta cheese, crumbled ½ red onion, thinly sliced fresh herbs (optional) salt and pepper, to taste For the salad dressing 50 ml brine of the peppadews 30 ml olive oil Here’s how 1 Cook the pasta in a pot of salt water according to instructio­ns on the packet. 2 Stir the biltong, peppadews, feta cheese and red onion through the pasta. 3 Mix together the brine and olive oil and drizzle over the pasta salad. Garnish with fresh herbs (if using) and season with salt and pepper. go! Drive & Camp says Mix two cups chopped lettuce with the salad for something green.
