CHEESE-AND-CORN SAUCE CHICKEN PASTA Waste not, want not

Use leftover braai chicken and mielies for a quick camp pasta. Ingredient­s (enough for 4) 4 chicken breasts 4 mielies 500 g pack penne pasta 500 ml béchamel (homemade or store-bought) 1–2 cups matured cheddar, grated 1 teaspoons cayenne pepper 1 teaspoon smoked chilli flakes salt and pepper, to taste handful basil leaves Here’s how 1 Braai (or cook) the chicken and mielies with salt and pepper, until cooked through. 2 Cook the pasta according to the instructio­ns on the packet. 3 Mix the pasta, béchamel and cheese. Flavour to taste with the cayenne pepper, chilli flakes, salt and pepper. 4 Shred the chicken into chunks and cut the corn from the cob and stir through the pasta. Garnish with fresh basil, if available. go! Drive & Camp says Homemade béchamel and goodqualit­y cheese makes this pasta delicious but use storebough­t sauce if you’re pressed for time.
