OLIVE-AND-TUNA PASTA SALAD Quick and easy

This pasta dish is one of my go-to dishes because you don’t need a fridge for it. Ingredient­s (enough for 4–6) 500 g pasta screws 100 ml PnP Greek vinaigrett­e (or something similar) 1–2 cans (170 g each) tuna handful Kalamata olives 2 whole tomatoes or a cup cherry tomatoes, chopped 2 cups salad leaves like rocket or baby spinach (optional) salt and pepper, to taste Here’s how 1 Cook the pasta in a pot of salt water according to instructio­ns on the packet. 2 Drizzle the salad dressing over the pasta while still lukewarm. Leave to the side to cool. 3 Stir the tuna, olives and tomato through the pasta. Lastly, mix in the salad leaves and serve immediatel­y. go! Drive & Camp says Blocks of cheese, peppadews, chopped cucumber and fresh chillies can also be added.
