I like using Black Beauty and Listada de Gandia (above) for ratatouill­e and roasted vegetables. Rosa Bianca (right) makes a lovely baba ghanoush and develops a delicious smoky flavour when you braai it over coals. The Japanese White Egg looks beautiful when you cut it into halves or quarters, or use it in a green curry chicken dish.
