San Marzano (below) is an Italian heritage tomato that bears fleshy, flavourful fruit on vines. Thanks to its thick flesh and minimal seeds, it makes the best tomato purée, which you can use in pasta sauces or tomato sauce. It is also delicious in fresh salads and on sandwiches, and dries out well in the sun.
