Frozen lemon yoghurt

Serves 6 Preparatio­n time 10 minutes plus freezing time

This sorbet has a refreshing lemon flavour, and the avo lends it a wonderfull­y creamy texture.

You need

• 1 large avocado • 2 cups (500ml) thick Greek yoghurt • ½ cup (125ml) full-cream milk • 2 tablespoon­s (30ml) lemon juice • teaspoon (0,6ml) salt (

• 2 tablespoon­s (30ml) sugar

This is how

Pulse all the ingredient­s in a food processor until smooth and creamy. Add extra sugar or lemon to taste. Churn the mixture in an ice-cream machine until it’s ready to eat, or pour into a dish and place in the freezer, stirring every half hour until frozen (this will take 3 to 4 hours).

Serve the frozen yoghurt with fresh mint leaves and melon balls.
