You need

FOR THE CHICKEN • 1 cube good-quality chicken stock, dissolved in 500ml water (or 500ml liquid stock) • 1 small onion, quartered • 1 small carrot, chopped • 1 celery stalk, chopped • 2 bay leaves • 10 peppercorn­s • 4 free-range chicken breast fillets

FOR THE WHIPPED FETA • 200g Danish feta • 70ml cream • 70ml full-cream Greek yoghurt • ½ teaspoon (2,5ml) whole cumin seeds,

roasted and freshly ground

FOR THE DRESSING AND SALAD • 2 tablespoon­s (30ml) honey • juice of half a lemon
