Cauliflower salad
Turmeric is cropping up in more and more recipes these days. The versatile dressing can be adjusted to your taste with ingredients such as fresh ginger, garlic and yoghurt, and used with green salads or even roast vegetables. Prepare the salad a day ahead if you like, but sprinkle over the almonds, dates and pomegranate seeds only just before you serve it.
Serves 6 Preparation time 15 minutes • 1 cauliflower, broken into
bite-sized florets • 2 tablespoons (30ml) olive oil • ½ teaspoon (2,5ml) ground cumin • ½ teaspoon (2,5ml) turmeric • ½ teaspoon (2,5ml) paprika • 3 tablespoons (45ml) tahini • 1 tablespoon (15ml) honey • ½ a lemon • ¼ cup (60ml) flaked almonds • 4 dates or 4 tablespoons (60ml) raisins • ½ cup (125ml) pomegranate seeds • 5 tablespoons (75ml) finely chopped
