This tart contains no flour and has the texture of nougat. It can be made the day before.

You need

• 125g dates (or dried figs or apricots) • 150g walnuts • 6 egg whites • a pinch of salt • 250g soft brown sugar • ¼ cup (60ml) dark unsweetene­d cocoa powder
