Gin and spanspek sorbet

Serve this refreshing­ly different sorbet in small portions as a palate cleanser between courses, or as a dessert.

Makes 1ℓ Preparatio­n time 15 minutes plus freezing time

YOU NEED

• 1 very ripe spanspek, peeled and seeds removed • 1/3 cup (80ml) gin • juice of 1 lime • creamy Danish feta cheese, to serve

THIS IS HOW

Cube the spanspek and pulp in a food processor, together with the gin, lime juice and a pinch of salt. Scrape the mixture into a dish and freeze until solid (or use an ice-cream machine).

Serve small balls of sorbet with cheese of your choice – I find creamy Danish feta works best.
