Watermelon and halloumi “pizza”

Salty, hot halloumi and sweet watermelon are a perfect match. We cut a round of watermelon into wedges – almost like a pizza – and placed the remaining ingredient­s on top, but you can also cut the watermelon into cubes and serve it in a salad bowl. Or try something different and fry the watermelon rounds on both sides before following the remaining steps.

YOU NEED

• 300g halloumi cheese (see tip below) • 3 tablespoon­s (90ml) olive oil • 1 jalapeño chilli, finely chopped • a handful of mint leaves • 100g rocket leaves • ½ red onion, sliced into thin rings • 4 rounds of watermelon • lemon wedges • 2 tablespoon­s (30ml) honey

THIS IS HOW

Slice the halloumi cheese into 16 pieces. Heat 2 tablespoon­s (30ml) of the olive oil in a pan and fry the halloumi until golden brown on both sides. Remember, when frying halloumi, don’t move it for the first 3 minutes – wait until a goldenbrow­n crust forms underneath it.

In the meantime, divide the chilli, mint and rocket leaves, and red onion among the watermelon rounds. Drizzle 1 tablespoon (15ml) of olive oil and a squeeze of lemon juice over each round, followed by freshly ground black pepper. Drizzle half a tablespoon (7,5ml) of honey over each round.

Divide the halloumi cubes among the watermelon rounds and serve right away. Halloumi is at its most delicious while it’s still very hot and melted.
