Cannabis-infused honey
Add this honey to food or use it to sweeten your tea. It’s great as an immune booster and has anti-inflammatory and antibacterial properties, so it helps to fight colds and flu and relieve a tight chest. Makes 200 ml Preparation time 5 minutes Infusing time 6–8 hours
YOU NEED
• 10 g dried cannabis flowers
• 200 ml locally sourced raw honey EQUIPMENT
• cheesecloth or pantyhose
• kitchen twine
• a glass jar with a lid
• a large pot or slow cooker
THIS IS HOW
Arrange the cannabis flowers in the centre of a square of cheesecloth, then gather it up at the corners to make a small bag. Tie it securely with kitchen twine. Place the cannabis bag in the jar and pour the honey over it. Seal the jar tightly with the lid.
Place the jar in water using the bainmarie method: fill a large pot two-thirds of the way with water and place the honey-and-cannabis jar in the water. If you are using a slow cooker, fill it one-third of the way with water and place the jar in the water. Remember: you don’t want to overheat the honey, which also has valuable medicinal properties, so keep the heat to a moderate temperature.
Heat on low for 6–8 hours, checking every 2 hours to make sure the pressure in the jar isn’t building up. If it is, release it by opening the lid slightly and then tightening it again. Wear gloves, as the jar will be hot.
After 6–8 hours, remove the honey jar from the pot or slow cooker. When the honey is cool enough to touch, remove the cheesecloth bag from the jar and squeeze out as much of the honey from it as possible. Put the lid back on the jar and store it in the fridge or in a cool, dark place. If stored correctly, it can remain potent for years.
tip Do not discard the cheesecloth cannabis bag! Boil it in milk for 15 minutes and make yourself a cup of soothing cannabis tea before bedtime.
