Stuffed chicken breasts with jalapeños

Stuff chicken breasts with cream cheese and jalapeño peppers for a fun twist on chilli poppers. Panko breadcrumbs have a more delicate texture and form a lighter crisp layer than other breadcrumbs.
You need
• 4 chicken breasts • 125 ml cream cheese • 4 slices of prosciutto or parma ham • pickled jalapeño peppers, sliced, to taste • 125 ml finely grated parmesan cheese • 250 ml Panko breadcrumbs or crushed nacho chips
Here’s how
1 Preheat the oven to 180° C. 2 Use a sharp knife to cut the chicken breasts lengthwise, but don’t cut all the way through. 3 Spread a layer of cream cheese inside the cut and stuff it with a slice of prosciutto and a scoop of jalapeño peppers. Season to taste with salt and pepper and fold the chicken breast closed. 4 Put the chicken breasts on a baking sheet. Combine the cheese and crumbs and cover each chicken breast with the mixture. Bake for 15 – 20 minutes or until the chicken is cooked through.
