Broccoli, cheese and potato bake
Serves 6 Preparation time 15 minutes Cooking time 45 minutes
This potato bake is delicious with braai meat or potjiekos and can easily be made over the fire.
You need
• 60 ml butter • 1 small onion, finely chopped • 2 cloves of garlic, finely chopped • ½ teaspoon cayenne pepper • 4 medium potatoes, finely grated • salt and black pepper • 1 head of broccoli, separated into florets • 250 g cream cheese • 500 ml finely grated cheddar • 250 ml grated mozzarella • 250 – 375 ml breadcrumbs • fresh basil
Here’s how
1 Preheat the oven to 160° C. 2 Melt the butter and fry the onion, garlic and cayenne pepper until flavoursome. Add the grated potato and fry for 10 minutes over a medium heat until soft. Season to taste with salt and black pepper. 3 Mix the potato, broccoli and cream cheese together and add two-thirds of the cheddar and mozzarella each. 4 Transfer the mixture to an oven dish or flat-bottomed potjie. Top off with the rest of the cheese, followed by the breadcrumbs. (For the best results, bake in a large, wide pot to cover a bigger surface with the crumbs.) Cover with foil and bake for 15 minutes. Remove the foil and bake for another 5 – 10 minutes until the top layer is brown. ( The dish can also be baked over the coals for 30 minutes – put some coals on the lid.) Serve hot with some fresh basil.
