Recipe for success

Now, whenever I see a recipe involving the potato – aka the spud, aka the Murphy – I get quite excited. And so I read with interest the recipe on page 119 of your August edition titled “Potato and leek soup with pork banger bites”.
Imagine my frustration when there was nothing said about the leek in the ingredients or the instructions! Then I thought perhaps there was a leak in the printing…
However, I will try out this recipe as it involves potato. My favourite meal is an Irish mixed grill: roast potatoes, boiled potatoes, creamed potatoes and chips!

Well spotted – a leak in the printing indeed! Originally, I wanted to use leeks for the recipe, hence the name. But I struggled to find any before the shoot, so I went with onions (which are cheaper and more readily available) instead and although we amended the ingredients list, we forgot to change the recipe name. If you prefer leeks, substitute the two onions for four fat leeks. This will create a more subtle flavour that’s just as delicious. Happy cooking!
