James Diack, who also studied at the ICA in Stellenbos­ch, is chef patron at three of Johannesbu­rg’s top bistros: Coobs, The National and The Federal. His culinary journey was inspired by travel – most notably a pilgrimage through Spain – and, these days, he is passionate about using the delicious seasonal ingredient­s supplied to his restaurant­s by his family farm Brightside in Magaliesbu­rg. James’s dedication to producing top-quality cuisine is matched by his devotion to pit bulls and his desire to rectify their bad reputation. He takes any opportunit­y to show off his loving and playful rescue pit bull, Roxy.
