James Di­ack, who also stud­ied at the ICA in Stel­len­bosch, is chef pa­tron at three of Jo­han­nes­burg’s top bistros: Coobs, The Na­tional and The Fed­eral. His culi­nary jour­ney was in­spired by travel – most no­tably a pil­grim­age through Spain – and, th­ese days, he is pas­sion­ate about us­ing the de­li­cious sea­sonal in­gre­di­ents sup­plied to his restau­rants by his fam­ily farm Bright­side in Ma­galies­burg. James’s ded­i­ca­tion to pro­duc­ing top-qual­ity cui­sine is matched by his de­vo­tion to pit bulls and his de­sire to rec­tify their bad rep­u­ta­tion. He takes any op­por­tu­nity to show off his lov­ing and play­ful res­cue pit bull, Roxy.
