Caramelised onion relish loaf
The relish is also delicious with a cheese platter, roast chicken or gammon, or as a topping for gourmet open sandwiches.
Makes 2 loaves Preparation time: 50 minutes Cooking time: 1 hour Oven temperature: 180°C
• 30ml butter
• 5ml olive oil
• 4 large onions, peeled and thinly sliced
• 1 green apple, seeded and coarsely grated
• 125ml dried cranberries
• 30ml brown sugar
• 60ml balsamic vinegar
• zest of 1 orange
• 750g store-bought bread dough
1 Melt the butter and olive oil together and sauté the onion slowly until glossy. Add the apple and berries, then the sugar, and stir through. Stir-fry until the apple is soft and the onions start to brown. Stir in the vinegar and orange zest and stir-fry until syrupy. Remove from the heat and cool.
2 Grease two loaf pans with butter. Divide the dough in half and roll out each piece into a long strip the same width as the length of your loaf pan.
Spread half the onion relish in a thick layer on one strip of dough, roll up tightly like a Swiss roll and place in the prepared pan. Repeat with the other strip and the rest of the relish. Cover loosely with cling film and leave to rise in a warm spot until they double in size.
3 Preheat the oven. Sprinkle a little coarse salt on the loaves and bake for about 35 minutes or until the loaves sound hollow when you tap on them. >>
