Lemon thyme

The lemon flavour and fragrance of this bushy thyme makes it a culinary favourite – and it’s also pretty in the garden because of its green and yellow foliage.

How to grow Lemon thyme is a small, shrubby perennial that grows to 30cm with small, bright greenishye­llow, lemon-scented leaves and pale mauve flowers in spring. It likes full sun and gritty soil that drains well. It is an excellent herb for growing in containers. For a good supply of leaves in winter, keep a pot or two in a sunny and sheltered spot, or plant in a hanging basket for the patio. Different types There are many different thyme varieties but those that stand out are ‘Golden’ (a groundcove­r), ‘Bressingha­m’ (produces masses of flowers in

summer) and ‘Silver Posy’ (variegated green-and-white leaves).

Tip of the month Lemon thyme stalks are very tough; strip the leaves off the stems or use whole sprigs and remove them after cooking.

Common problems Can get straggly if not trimmed or picked regularly.

Uses Stews and potjies, roast chicken (use as stuffing or under the skin) and for flavouring roasted or sautéed veggies. It’s very good with baked salmon or trout and combines well with bay leaf and parsley as the classic bouquet garni for infusing slow-cooked meat dishes and soups.
