LOSE IT!

SIOBION CAMERONDIR­KS’S ZESTY LCHF ZOODLES

SERVES 2

• ½ onion, chopped • 1 tbsp coconut oil • 1 garlic clove, chopped • 5 cherry tomatoes, chopped • 200g beef mince • 1 tsp dried oregano • 1 tsp dried sweet basil • 1 tsp dried rosemary • 1 tsp dried chilli flakes • ½ cup chopped red and

yellow peppers • ¼ cup fresh pineapple,

chopped (optional) • ¼ cup water • 1 tbsp cream cheese • 1 tbsp fresh parsley, chopped • 150g baby marrow zoodles,

cooked • Parmesan cheese, to garnish • fresh coriander, to garnish

1. Sauté the onion in the coconut oil in a medium size pan until it is translucen­t. Add the garlic and cherry tomatoes and sauté for another 2 minutes. Add the mince and sauté until it is cooked. Stir in the herbs and chilli flakes. 2. Add the peppers and pineapple (if you’re using it) and add ¼ cup water, or as needed. Simmer the mixture for 5 minutes. Stir in the cream cheese and parsley. Remove the pan from the heat. 3. Toss the zoodles and mince mixture together. 4. To serve: Divide the zoodleand-mince mixture between two bowls, grate Parmesan cheese on top and garnish with fresh coriander.
