LOSE IT!

SAVOURY GREEN OLIVE & RED PEPPER LOAF

SERVES 4

• 1 tbsp coconut oil

• 1 red pepper, chopped

• 2 garlic cloves, chopped

• 5 jumbo eggs

• 2 tbsp extra-virgin olive oil

• 100g Cheddar cheese, grated

• 1 tbsp dried oregano

• 100g sliced green olives

• 50g coconut flour

• 2 tbsp psyllium-husk powder

• 1½ tsp baking powder

• Himalayan salt and black pepper

• thyme sprigs, to serve

1. Preheat the oven to 180˚C. Grease and line a 1L capacity loaf tin. Heat the coconut oil in a pan. Sauté the pepper and garlic until the garlic is golden. Transfer the mixture to a bowl. Add the eggs and olive oil. Whisk to combine.

2. Add the cheese, oregano, olives, flour, psyllium husk, and Volume 24 baking powder to the eggs and stir well. Season the batter. Pour it into the loaf tin and bake the loaf for 30–40 minutes or until it is firm.

3. To serve: Let the loaf cool completely, slice it and serve it with fresh thyme sprigs.
