BANANA BREAD

• 2 bananas, finely chopped

• 2 jumbo eggs

• ¼ cup coconut oil, melted

• 150g macadamia nut meal

• 30g desiccated coconut

• 1½ tsp ground mixed spice

• 1 tsp baking powder

• 30g macadamia nuts, chopped

1. Preheat the oven to 170˚C. Grease and line a 1L capacity loaf tin. Whisk the banana and eggs in a bowl until the mixture is smooth. Add the coconut oil and continue to whisk until the ingredient­s have combined.

2. Add the remaining ingredient­s and stir to combine. Pour the mixture into the loaf tin and bake it for 40–45 minutes or until a skewer that has been inserted comes out clean. Remove the loaf from the tin and let it cool.

3. To serve: Serve the bread sliced.
