BANANA BREAD
SERVES 10
• 2 bananas, finely chopped
• 2 jumbo eggs
• ¼ cup coconut oil, melted
• 150g macadamia nut meal
• 30g desiccated coconut
• 1½ tsp ground mixed spice
• 1 tsp baking powder
• 30g macadamia nuts, chopped
1. Preheat the oven to 170˚C. Grease and line a 1L capacity loaf tin. Whisk the banana and eggs in a bowl until the mixture is smooth. Add the coconut oil and continue to whisk until the ingredients have combined.
2. Add the remaining ingredients and stir to combine. Pour the mixture into the loaf tin and bake it for 40–45 minutes or until a skewer that has been inserted comes out clean. Remove the loaf from the tin and let it cool.
3. To serve: Serve the bread sliced.
