Teddie’s Peanut Butter Dream, named for the Teddie’s Peanut Butter brand, was invented by Alexandra Koblan at Bully Boy Distillers in Boston. You can order it at the Bully Boy tasting room, but you can also make it at home. The key is fat washing. You soak the peanut butter in rum to impart the peanut-butter flavour in the spirit without adding the slickness of the fat itself. And since you have to use an entire bottle of rum for the fat washing, it’s more than just an everyday drink. It’s a drink for entertaini­ng. Invite some friends over and serve.

TEDDIE’S PEANUT- BUTTER DREAM

45 ml peanut-butter

fat-washed rum* 15 ml heavy cream 15 ml white rum 22 ml simple syrup 1 egg white 1 heaped scoop all-natural

peanut butter Combine ingredient­s in a cocktail shaker without ice. Dry shake for 12 to 15 seconds until ingredient­s are well mixed. Add some ice and shake for 7 to 10 seconds, or until the tin begins to feel cold. Double strain into a coupe glass and serve.

*PEANUT BUTTER FAT-WASHED RUM

1 bottle dark rum 1 cup all-natural

peanut butter Combine ingredient­s and let it sit in a sealed container for five hours at room temperatur­e. Now stick the container in the freezer and allow to infuse at least overnight, or as long as one week. Remove from freezer, thaw, and strain through cheeseclot­h or a coffee filter and seal. Keeps for up to one month when refrigerat­ed.
