Seafood-Hyper Walkie Talkies

INGREDIENT­S:

500g deveined XL prawns (washed)

500g crab portions washed and drained

1 tsp lemon juice

1 cup cleaned cubed pumpkin 1 cup oil

1 tsp jeera seeds & mustard seeds Young curry leafs

2-3 dry chillies

3-4 slices garlic

1 tsp chilli powder

1 tsp turmeric

Salt to taste

1/2 cup grated fresh coconut 1/4 cup tamarind juice

1/4 cup sugar 1/2 cup fresh orange juice 2 tomatoes (ripe and grated) 1 cubed onion

2 tsp butter

1 tsp crushed garlic Extra coriander to garnish Sour cream to drizzle

METHOD: Heat oil, butter, garlic and fry prawns quickly. Remove and dip in orange juice. Leave aside. Fry crab in oil and butter. Add salt. Remove and keep aside. Add jeera, sauté garlic slices, dry chillies, curry leafs, onions, chilli powder, turmeric powder and grated tomato. Drop in pumpkin, lemon juice, coconut, sugar and salt tamarind juice. Lower the heat and allow to cook until a thick gravy results. Drop in crab and simmer until the oil floats on top. Place in prawns and do not overcook until your eyes say it all. Use coriander to garnish. Serve with roti or freshly cooked rice.
