Pasta & 4 Bean Mixed Salad
100g pasta shells
1 can 4 bean mix
1 small green pepper cored and finely chopped 1 small red pepper, cored and finely chopped 1 small onion, finely chopped
1 cup (250 ml) frozen sweet corn, thawed (or off the cob)
1/3 (60ml) olive oil
1 tbsp (15ml) fresh lemon juice
1 clove garlic minced
½ tsp (2.5ml) white sugar
½ tsp (2.5 ml) fresh ground black pepper
¼ – ½ tsp hot chilli powder
½ tsp (2.5ml) cumin powder
½ tsp (2.5ml) salt
¼ cup (60ml) fresh coriander leaves finely chopped Mixed lettuce leaves to serve
Boil pasta as per the instructions on the pack. Once cooked, drain and keep aside.
While the pasta is boiling, in a big glass bowl toss in the bean mix, red and green peppers, onion and sweet corn.
In a separate bowl, combine the following: the olive oil, garlic, sugar, black pepper, chilli powder, cumin powder, salt and coriander leaves.
Mix until the sugar is dissolved. Pour over the bean mix. Gently mix to incorporate the dressing throughout the dish.
Place a handful of lettuce in a bowl and a generous serving of mixed bean salad and voilà – there we go – a refreshing summery pasta and mixed bean salad.
