Koeksister­s

Mix together with a whisk:

4 cups cake flour

2 cups self raising flour 2 tbs Klim/Cremora

¼ cup brown sugar

½ tsp salt

10g (1 packet) instant yeast 30ml powdered mixed spice 10ml powdered cinnamon

In a separate bowl mix together in order as per the list below:

3 tbs solid butter

1 ½ cups hot water 1 tbs oil

1 cup milk

2 tsp vanilla essence

Then beat 1 egg and add to the other liquids.

Add liquid mix to dry ingredient­s and mix thoroughly to form a soft smooth dough (add extra flour a little at a time if dough is too wet).

Cover dough with a little oil and leave to rise for about one hour in a warm place. Once risen, roll dough into a sausage shape with about 5cm diameter and cut into 2cm slices.

Set aside to rise again for about 15 minutes. Deep fry in medium hot oil until golden brown. Remove with tongs and drain on a paper towel or a clean dish towel.

Dip in hot syrup (recipe below), which is still on a low flame on the stove.

Syrup:

2 cups brown/white sugar 3 cups water

3 cinnamon sticks 5 cardamom pods

2 star anise Place all the ingredient­s in a large saucepan and bring to a boil on medium heat. Stir until the syrup becomes slightly sticky.

Boil the koeksister­s in it for about 1 minute. Remove and sprinkle with dessicated coconut if you like. Best served warm.
