Soup will keep winter blues away

THE WINTER chills are certainly setting in. The leaves are turning intense shades of red, a promise that winter is on its way. Sharing an easy-to-make bowl of soup with family or even strangers always takes my winter blues away.

A hint of coriander highlights the flavour of tomato – in fact it highlights so many flavours. The world over pays attention to this humble leaf, Thailand, India, China, the US, the UK, Mexico and many more. The name seems to change from country to country as well. Americans refer to it as cilantro, Indians say dhania and the English coriander leaves. If that’s not enough, there are a bunch of health benefits too. If you are having problems with diabetes, blood pressure, cholestero­l, immunity or even insomnia… eat more coriander! No matter what you call it, it certainly is one of the most delightful herbs. Easy Meals for Busy People Serves 4 1 onion finely chopped 2 tbs oil 5 medium-sized tomatoes peeled and chopped 1 tin tuna fish I lemon 1 fresh green chillies 1 cup sour cream 1/2 tsp salt 1 bunch of fresh coriander leaves METHOD In a large pot, heat the oil, add onions and fry for 5 minutes. Add the tuna, fry for 2 minutes. Add tomatoes, salt and chilli. Peel the lemon one long continuous piece and add the lemon peel to the soup.

Simmer for 15 minutes, until all the tomatoes are soft. REMOVE the lemon peel. Place the tomato soup and coriander leaves in a blender and blend into a smooth consistenc­y. Stir in sour cream, serve hot. Garnish with fresh coriander leaves. All recipes available on Facebook: The Flying Cook
