Roast Pork with Apple Sauce
THERE is something rather marvellous involved when it comes to a good pork roast, with its the crispy crackling and delicious, flavourinfused meat. The really good part about this dish is the ease and simplicity of making it, allowing you more time with your family while it is simply sizzling away in the oven. The flavour of the apple sauce with the juicy pork reminds me of all the good times with my grandmother, better known as Ouma. 3 large apples 1/4 cup water 1 tsp sugar Pinch of cinnamon Pre-heat oven to 240 Using a sharp knife, score pork rind by making shallow 1cm deep cuts into the pork.
Using kitchen string tie pork at 2cm intervals.
Cut a deep slit into the pork; insert the garlic and rosemary.
Place in the oven for 40 minutes or until rind blisters.
Reduce heat to 180 ; roast pork for 1 hour.
Remove from oven; allow to stand for 15 minutes before carving.
Serve with apple sauce.
