THE FLYING COOK
HAMBURGERS are always a favourite. However, we don’t have to make them a naughty treat. They can be healthy with delightful flavour. We have removed the bun (less carbs, more protein) and the same amount of eating pleasure. HEALTHY BURGER ALTERNATIVE 1kg lean beef mince 1 onion finely chopped 2 tbs oil 2 tbs balsamic vinegar 2 eggs 1½ cups bread crumbs ¾ cup fresh basil finely chopped 2 tbs ground coriander 3 cloves of garlic finely chopped 2 tsp coarse black pepper 2 tsp coarse salt Oil to fry patties ½ cup pomegranate seeds 1 pineapple slice
Fry onions and garlic, add balsamic vinegar.
Place mince in mixing bowl, add eggs, bread crumbs, coriander, basil, pepper and salt, add onions, mix well. Portion into 8 round meatballs (tennis ball size), flatten into 2cm thick patties.
Heat oil to medium temperature, fry patties 2 minutes per side.
Serve with fresh garden salad, garden greens or a side of your choice.
I have served this dish with pomegranate seeds and pineapple slices.
