The base, a simple mixture of flour, water, salt and yeast should make a soft and pliable dough, yet charred and chewy around the edges and the original, Margherita, is topped with tomatoes, mozzarella cheese, basil, and olive oil. Making an authentic pizza at home is difficult and most cooks come unstuck when it comes to the base. This should be baked on the floor of a wood-fired oven at 485°C. A way around this in a domestic kitchen is a pizza stone, pre-heated on the top shelf of an oven at its highest setting, before placing the pizza on the stone for baking. No pizza stone? Try an upturned metal baking tray, preheating in the same way as the pizza stone. Or this option from Chef Gordon Ramsay: preheat a non-stick frying pan on top of the stove till very hot. Place the raw pizza in the pan for 3 minutes to brown the base and then pop it into the oven on the highest setting to complete the cooking.
