PIMMS
Prep: 12-15 mins Makes: 10-12 glasses
Think of Wimbledon, and hot sunny days … Pimms is like fruit salad in a gin-based refreshing drink.
2 oranges, rinsed, quartered, sliced and pips removed
1/4 cucumber, rinsed and thinly sliced
5-10 strawberries (or other berries of your choice) rinsed, hulled and halved
10-12 small sprigs fresh mint
500ml (2 cups) Pimms
6 cups lemonade (or mix lemonade with ginger ale)
Put the fruit and mint in a large (3l) jug or glass dispenser. Pour in the Pimms and lemonade. Stir and add plenty of ice. To serve, pour into long glasses, ensuring each glass has some fruit, a sprig of mint and blocks of ice.
