We certainly are a nation who enjoy snacking, considerin­g the large variety available on the supermarke­t shelves — with global flavours gaining in popularity. Hummus, the ancient Middle Eastern recipe of a creamy blend of chickpeas and tahini, has become so popular, a gettogethe­r is incomplete without a large bowl with nibbles to dip in. Delectable chicken liver paté may be French in origin yet tubs of the ready-made version, covered in a layer of butter, is also a great party standby. Giving the French recipe a local spin, flaked smoked snoek and cream cheese makes an excellent paté. We can’t leave out a local favourite, the frikkadel, made with seasoned minced beef, shaped into balls and fried, is the perfect mouthful.
