Super easy rainbow pesto pizza
Stay in this Valentine’s Day and bond while making a delicious Foodies of SA rainbow pizza. Then indulge in a decadent trifle followed by a sparkling berry drink. All this can be done without breaking the bank.
SERVES 2 TIME 45MIN LEVEL MEDIUM INGREDIENTS
1 ½ cups self-raising flour 1 cup double cream yoghurt Basil pesto 2 cups mozzarella, grated ½ each red onion, red pepper, green pepper, yellow pepper, diced ½ cup sweet corn kernels ½ cup rosa tomatoes, halved 65g broccoli tips Salt and pepper Olive oil
METHOD
1. Preheat oven to 200°C. 2. Mix flour and yoghurt in a bowl; place on floured work surface. Knead for 8 to 10 minutes, adding more flour if dough is too sticky. 3. Line and grease baking tray with baking paper. Roll out the dough and spread to the edges of the lined tray. 4. Spoon basil pesto over dough and spread evenly. Evenly sprinkle cheese on. 5. Add chopped toppings in stripes for rainbow effect. 6. Season with salt and pep-
per. Drizzle with olive oil.
7. Bake for 20-25 minutes until dough is golden crispy. Slice and serve.
