Sweet rice and chana (black gram)

Sweet rice

1 cup white rice 2 cups milk 1½ cups water Pinch of salt 125g butter ½ cup sugar ¼ can condensed milk ½ cup desiccated coconut ¼ cup chopped almonds 1½ tsp cinnamon powder 1½ tsp elachi powder Rinse rice till it runs clear, then let it sit in 1 cup water for 30 minutes.

Place the rice to boil on medium heat, add your pinch of salt, cinnamon stick and elachi powder.

Continue to cook on medium heat. Stir at regular intervals. Once the water starts to evaporate, add the remaining half a cup of water .

Gradually add the milk followed by the sugar and condensed milk. Finally add butter. Cook till rice is soft, add extra milk if needed.

Chana (black gram) 1 cup black gram, soaked overnight in water 8 dry chillies 2 tsp mustard seeds 1 large onion, chopped 3 tbs oil 1½ tsp salt Boil chana till soft to the touch. Drain and leave aside. Place a large frying pan on the stove on medium heat.

Add the oil and fry the onions till translucen­t.

Add mustard seeds and curry leaves. Add the boiled chana. Mix well and finally add the salt.
