Bhajia (pakora)

250g of chilli bite powder mix 1 tsp baking powder 4 finely-sliced green chillies 1 large spring onion, finely chopped 1 medium-sized onion, diced finely 10 chopped curry leaves 1 cup chopped spinach leaves ½ a level tsp of mixed ginger and garlic paste Water to make a thick batter Oil for frying Combine the spinach, chillies, spring onion, onion, and curry leaves.

Add the chilli bite mix, baking powder and finely crushed ginger and garlic.

Stir in a little water, enough to form a thick batter.

Heat the oil in a frying pan and spoon in the mixture.

Wet your hands, take some of the mixture and make small balls.

Fry until golden brown. Serve while hot.
