BLUEBERRY CHEESE CAKE

Ingredient­s

1 x 250g tub SPAR Full Fat Cream Cheese Mascarpone 1 x 250g tub SPAR Medium Fat Cream Cheese plain 1 cup SPAR Castor Sugar Zest of ½ lemon Juice of ½ lemon (squeezed from a SPAR Freshline Lemon) 250ml SPAR Long Life Cream, whipped 2 sheets Gelatin 250g SPAR Freshline Blueberrie­s 7 SPAR Freshline Hot Cross Buns 500g dark chocolate

Method

1. In a bowl, mix mascarpone, cream cheese, castor sugar (reserve 2 tablespoon­s), zest and juice. Beat until smooth. Fold in the cream and set aside in the fridge. 2. Prepare the gelatin according to instructio­ns on the package. Fold into the cheese mixture.

3. To make blueberry sauce: Heat a saucepan and add blueberrie­s with remaining castor sugar. Cook for 5 minutes, shaking pan regularly until mixture is syrupy. 4. Slice each hot cross bun sideways into three equal parts. Line a 24cm springform cake tin with cling plastic wrap. Lay the bottom buns in the cake tin and spread with cheese mix. Follow with blueberry sauce, then lay the middle buns. Spread another layer of cheese and blueberry sauce and follow with top bun parts. Place in the fridge until set. Meanwhile in a jug, melt chocolate in the microwave for 5 minutes. 5. Serve cake with chocolate sauce.
