Grilled Texas rib eye and T-bone steaks
For Texas rib eye steak 2T black pepper 1T smoked paprika 1T cumin 2tsp dried mustard 2tsp dried oregano 2tsp dried coriander 1tsp chilli powder 3T olive oil For T-bone steak 3 T olive oil 2 cloves garlic, crushed 2cm ginger stalk, crushed 4 chillies, finely chopped
½ cup tomato puree 2T brown sugar 3T honey ¼cup white wine vinegar To season after cooking Salt and pepper
1. Mix rib eye ingredients and rub spice mix on both sides. Marinate for an hour. 2. Mix T-bone ingredients in a pot and cook for 15 minutes. Set aside and leave to cool. 3. Once the marinade is cooled, marinate T-bones for about an hour. 4. Braai on medium heat for about 15-20 minutes on each side, or until browned and cooked.
