1 can condensed milk
2½ cups icing sugar
5 cups desiccated coconut Pink food colouring
500g white chocolate
1. Combine the condensed milk, icing sugar and coconut and mix until blended well. Divide mixture into two bowls. In one bowl, add a few drops of pink colouring and fold in, to mix well.
2. Prepare a loaf tin with cling wrap, with the edges hanging over the tin. Pour the first mixture into the pan and press lightly. Add the second mixture and press down. Refrigerate.
3. In a double boiler, melt the chocolate and add a few pink colouring drops. Set aside to cool slightly.
4. Cut the coconut ice into slices, then dip in the melted chocolate. Set at room temperature. Serve.
