CO­CONUT ICE

1 can con­densed milk

2½ cups ic­ing sugar

5 cups des­ic­cated co­conut Pink food colour­ing

500g white cho­co­late

Method

1. Com­bine the con­densed milk, ic­ing sugar and co­conut and mix un­til blended well. Di­vide mix­ture into two bowls. In one bowl, add a few drops of pink colour­ing and fold in, to mix well.

2. Pre­pare a loaf tin with cling wrap, with the edges hang­ing over the tin. Pour the first mix­ture into the pan and press lightly. Add the sec­ond mix­ture and press down. Re­frig­er­ate.

3. In a dou­ble boiler, melt the cho­co­late and add a few pink colour­ing drops. Set aside to cool slightly.

4. Cut the co­conut ice into slices, then dip in the melted cho­co­late. Set at room tem­per­a­ture. Serve.
