2 Rooi­bos tea bags

2 litres wa­ter

½ cup rose syrup

½ cup honey

500g straw­ber­ries, hulled

Bunch mint leaves

Method

1. In a deep saucepan, bring to boil Rooi­bos, wa­ter, rose syrup, honey, half of the straw­ber­ries and half of the mint leaves. Re­move from the heat and leave the tea bags to steep un­til cool. Sieve and dis­card the tea bags, straw­ber­ries and mint.

2. Pour the tea into serv­ing jugs, add re­main­ing straw­ber­ries and mint, and ice. Serve chilled. Add ice, more straw­ber­ries and mint. Al­co­hol, such as vodka or rum, may also be added.
