CRUSTLESS STRAWBERRY CHEESECAKE

Ingredients

1 cup cream cheese, smooth

1 cup cottage cheese, smooth

1 cup mascarpone cheese, smooth

½ cup castor sugar

1 lime rind, zested Juice of ½ lime

Strawberries, sliced

Method

1. In a large bowl, beat all the cheese with castor sugar, lime zest and juice, until well blended.

2. Pour into small sherry glasses and garnish with strawberry slices.

3. Serve chilled.
