FROZEN COCONUT & BERRY YOGHURT

Ingredient­s

1 can coconut cream

2 cups double cream

4 cups double thick yoghurt

1 lime rind

1 cup blueberrie­s, frozen and crushed

1 cup strawberri­es, frozen and crushed

65ml strawberry cream liqueur

Method

1. In a large bowl, mix coconut cream, double cream and yoghurt. Divide mixture into two.

2. Add lime rinds to the first mixture and set aside.

3. In the second mixture add frozen berries and liqueur.

4. Mix the two until the berries are well blended. 5. Place in a mould or tin and freeze for four hours or overnight. Serve.
