Food – Buffet With A Twist

Serves: 4 Prep time: 2 1/2 hrs

INGREDIENT­S

800 g chuck, cubed

3 T olive oil

250 g bacon, chopped

2 T butter

1 onion, finely chopped

2 cloves garlic, crushed

2 tsps ginger, crushed

2 tsps coriander

3 sprigs thyme

2 bay leaves

3 star anise

2 T paprika

1/4 tsp chilli flakes

2 cups roasted red pepper sauce 1 cup white wine wine 3 cups beef stock 1 cinnamon stick Salt and black pepper

METHOD

1. Preheat oven to 200°C. In a large ovenproof casserole pot, heat oil and fry bacon until crispy. Remove and set aside. Season meat with salt and black pepper, and brown in batches in the same pot. Remove and set aside.

2. In the same pot, melt butter and sauté onion, garlic and ginger until translucen­t. Add coriander, thyme, bay leaves, star anise, paprika, chilli flakes.

3. Return the bacon and meat to pot, season with salt and black pepper, add red pepper sauce, white wine, beef stock and cinnamon stick. Stir until well combined.

4. Close the pot, cook in the oven for 2 hours until meat is tender and sauce is reduced. Serve.
