NEAPOLITAN CAKE

Serves: 6-8 Prep Time: 1 hr Ingredient­s

1 x 500 g vanilla cake mix with icing

1x 500 g chocolate cake mix with icing

Oil (according to package) Eggs (according to package) Milk (according to package)

1 tsp strawberry essence

Few drops pink colouring 200 g margarine 5 T cream cheese 2 cups icing sugar

Method

1. Preheat oven to 180°C. In a large mixing bowl, empty the vanilla cake mix contents. Add the required oil, eggs and milk, mix using an electric beater for two minutes until smooth. Divide the dough into two portions.

2. Add the strawberry essence and a few drops of pink colouring into the one portion. Mix well and set aside. 3. In another large mixing bowl, add the chocolate mix, add oil, eggs and milk according to instructio­ns on the package. Mix using an electric beater until smooth.

4. Add all three mixtures in different cake tins, and bake for about 25-35 minutes, or until a skewer comes out clean when inserted. 5. For the icing, add magarine in a large bowl, and beat using an electric beater at high speed until pale. Add the cream cheese and beat for 30 seconds. Remove 4 T of the mixture and set aside.

6. Add the vanilla mix icing and two cups icing sugar, beat until soft. Divide the mixture into two and add colouring into the one mixture. 7. Beat the 4 T of magarine and chocolate icing mix until smooth.

8. To assemble the cake, start with the vanilla layer with its icing, then the strawberry cake and its icing, and top with the chocolate. 9. Add the remaining icing into three piping bags. Starting with the vanilla, ice around the bottom cake, followed by the strawberry and chocolate cakes. Smoothen with spatula and serve.
