BAKED TILAPIA

Ingredient­s

1 tilapia fish, cleaned

1/2 cup butter, melted

1 T garlic salt

2 tsps freshly ground pepper 1 tsp paprika

1 lemon zest

Handful parsley, chopped 100 g asparagus, trimmed and halved

100 g exotic tomatoes, halved Bunch basil leaves, shredded

1 tsp dijon mustard

1/4 cup extra-virgin olive oil

1/4 cup lemon juice, freshly squeezed

1/2 cup crumbled ricotta cheese

1 ripe avocado, cut into cubes Salt flakes

Freshly ground black pepper

Preheat oven to 180°C. Rub whole fish with melted butter. In a small bowl, mix garlic salt, pepper and paprika. Season fish on the in- and outside. Sprinkle with lemon zest and parsley. Place on a baking tray and bake

for 5 to 7 minutes. Turn fish and drizzle the other side with butter. Sprinkle with more lemon zest and parsley.

Boil salted water and blanch asparagus for about 2 minutes. Drain and rinse with cold water.

In a big bowl, toss the asparagus, tomatoes and basil. In a separate bowl, mix mustard, olive oil and lemon juice. Drizzle onto the salad, mix in ricotta and avocado. Season with salt and pepper and serve with fish.
