Bar: Carlyle’s on Derry 17 Derry Street 021 461 8787 Cocktail: Carlyle’s cocktail Price: R40 Ingredient­s: Bacardi rum, Southern Comfort, amaretto liqueur, Pimm’s, orange juice and grenadine HIGH on the slopes of Vredehoek is an orange coloured eatery that serves a punchy cocktail in their signature colour. The deep blood orange Carlyle’s cocktail is built in layers and makes a tall drink served with ice.

General manager William Coetzee said they made the drink late one night in an attempt at copying the colour of the walls. It’s a sweet, minty drink with almond flavours. Coetzee says the drink has been selling steadily since its launch two months ago.

Carlyle’s serves Italian fare, but has added variety such as Thai dishes.

The kitchen is open from 5.30pm to 10.30pm daily. The bar is open from 4.30pm to 2am. Happy hour is from 5pm to 7pm when cocktails are half price. – Wendyl Martin
