The deep blood or­ange Car­lyle’s cock­tail is built in lay­ers and makes a tall drink served with ice.

Gen­eral man­ager Wil­liam Coet­zee said they made the drink late one night in an at­tempt at copy­ing the colour of the walls. It’s a sweet, minty drink with al­mond flavours. Coet­zee says the drink has been sell­ing steadily since its launch two months ago.

Car­lyle’s serves Ital­ian fare, but has added va­ri­ety such as Thai dishes.

The kitchen is open from 5.30pm to 10.30pm daily. The bar is open from 4.30pm to 2am. Happy hour is from 5pm to 7pm when cock­tails are half price. – Wendyl Martin
